Featuring a dazzling cross section and breadth of flavours, 3 Ravens will be demonstrating the incredible potential that beer has in the fine dining environment. You can expect beers that employ various types of barrel treatment – including Port, Shiraz and Whisky, a beer inspired by the Whisky Sour cocktail, beer modelled on Pedro-Ximenez style of wine, and one produced in the style of Oloroso sherry. Unique ingredients include: Pinot Noir pomace, with notes of raspberry, lavendar and cassia; Victorian hops, with notes of white grapes and stonefruit; and beechwood smoked malts reminiscent of camp fire and cured meats. +++ MENU TEASER +++ Wild Ravens Pinot Noir Golden Sour – a beer brewed with oats and rye and aged in old wine barrels with 3 Ravens house culture of wild yeast and lactic acid bacteria, then matured on Kilmore grown Pinot Noir pomace courtesy of our friends at Payten & Jones. Due to the complex fermentation, maturation and blending, this beer has the type of organic complexity more commonly associated with naturally fermented products like sourdough, saurkraut, washed rind cheese and natural wine. This beer will be paired with rhubarb and beetroot cured salmon and a salad encorporating brewing malt and “Wild Raisins” - the fermented currants used to make the beer - and is just one of five incredible pairings curated specifically for this dinner. 3 Ravens will be pouring a beer named by leading beer writer Matt Kirkegaard as one of his top 5 of 2016, and another recently voted by a panel of 40 experts as the Best New Victorian beer release of 2017 - and guarantee that by the end of the night you'll have a whole new appreciation of what beer can be. 5 courses with matching beer and more - $150 per person.
