Brewing has taken place in Scotland for the past 5,000 years, primarily carried out by alewives or monasteries. Brewing in Scotland continued, with larger breweries eventually merging on the small brewers, and men taking over the role of alewives once the trade became profitable.
During the 1970's, four friends established a brotherhood for the appreciation of traditionally brewed beer. The Campaign for Real Ale (CAMRA) define 'real ale' as being brewed from traditional ingredients, matured by secondary fermentation, and served without extraneous carbon dioxide. Ingredients should be fresh and natural, and the resulting drink full of flavor.
Scottish ales typically have a caramel-like malt flavor, and hops do not have a large presence.
