French

Description

French beer originated with small, rural breweries who brewed to supply their local communities. Regions in the northern half of France dominated the market, with over a thousand breweries until the Industrial Revolution. The revolution, combined with damage from world wars, left only a few large brewing companies in operation.
It wasn't until the mid-90's that microbreweries reappeared, returning to the almost-lost heritage of French brewing. Many breweries produce a bière de garde, a unique French ale style. To use the label Appellation d'origine contrôlée, "Pas de Calais/Region du Nord, the brewer must use regional ingredients only, to maintain the products' authenticity. It is top fermented and fruity, appearing amber in colour, matured in a cave for between 40 to 60 days.
The French beer market also has ties with Monastic brewing, organic and seasonal beers, produced for both March and Christmas.
