Let Sleeping Dogs Lie

Our imperial stout used a massive amount of malt, with plenty of dark roasted malts and a small amount of toasted oats to add smoothness. We joined forces with the guys at Four Rascals to perfect a coffee blend, that would work perfectly with this powerful brew. We fermented and aged in a small American oak barrel, soaked with a beautifully layered liqueur port from Taminick Cellars, with a combination of Belgian yeasts. The flavours are very rich, with chocolate, mocha, plum pudding, rum and raisin the driving force, with plenty of hop bitterness to balance.
