Honey

Description

Honey is a highly fermentable ingredient that can be brewed with almost any beer style. Adding honey to beer can raise the alcoholic content and lighten the body. It can also be used to raise the sweetness, however due to honey fermenting so completely, very little character will be left in the beer without special precautions taken. Honey is a common addition in holiday beers and is great in strong beers that will be left to age.
Mead is the most well-known form of honey brewing, produced by fermenting honey with water and can range from 8-20% ABV. The yeast used for mead is often the same as the yeast used in wine making, and often ferment at the same temperatures used for wines.
