Zwickelbier
Description
Zwickelbier is a weak, less full-flavoured variety of Kellerbier (cellar beer). It was originally used to refer to the small measure of beer taken by the brewmaster from the barrel. This was done using a special siphon called the Zwickelhahn.
Modern Zwickelbier is usually less hoppy and not left to age as long as Kellerbier. It is unfiltered and unpasteurized, and matured in deep vaults. The result is a smooth, cloudy beer that is rich in vitamins from the yeast. Zwickelbier is not as pronounced as Kellerbier.
