Sahti
Description
Originating in the 1500's, Sahti is a Finnish farmhouse ale made with baker's yeast. The traditional use of juniper twigs as a filter creates a kind of juniper infusion. Sahti has lots of body from the proteins that remain after the spent grain is separated from the liquid, as the liquid (wort) is not boiled before fermentation. This is a tart, cloudy, unfiltered beer with lots of sediment. Sahti is not generally hopped, so it's up to the juniper twigs to preserve and balance the beer.
