Lager
Description
While ales are made using a yeast that is top fermenting and works best in warmer temperatures, the yeasts used to ferment lager can withstand lower temperatures and are bottom fermenting. Therefore, less by-products come out during fermentation and the result is a taste that is cleaner and more crisp. This clean taste is maintained by storing lager at cold temperatures. The name 'Lager' is derived from the German word 'lagern', which means store, as these beers used to be stored in caves during warmer months.
